Tofurky® Sausage Bake

Preheat oven to 350°F

• 1 pound penne regate pasta, cooked and drained
• 1 large yellow onion, coarsely chopped
• 1 small head radicchio, chopped
• Red wine
• 2 (25.5 oz) jars pasta sauce*
• 1/2 cup grated Parmesan (or Romano) cheese
• 1 14-oz package Tofurky® Italian Sausage*, cut into bite-sized pieces
• 1 ball Mozzarella cheese
• 6 basil leaves, chopped

Over medium heat, sauté onion in EVOO until translucent. 
Stir in radicchio (when cooked radicchio loses its bitterness and 
develops a sweet, nutty taste) and continue cooking until it softens.
Add a splash of red wine and cook for another minute or two.
In goes 1-1/2 of the jars of pasta sauce and the Parmesan; mix well 
(at this point you can remove pan from the heat).
Add the Tofurky® and pasta - mix thoroughly.
Pour everything into a large rectangular baking pan (9x13), tear or 
cut the Mozzarella into bits and arrange on top, then scatter the 
basil over it all. Bake for 30 minutes.

Serve with a green salad and a glass of red wine. Bon appétit!
